Preserving memories

For Oded, preserving conjures happy memories of childhood summers, home and his mother. It is a practice that is part and parcel of Middle Eastern culture, and when Oded left his home in Israel to study in London as a young adult, he naturally began making his own preserves. Although he was studying textile design, food was his passion and Oded would travel vast distances in search of ingredients which weren’t commonly found in the ‘Big Smoke’. His preserves became so popular that soon he was supplying the exclusive Fortnum and Mason department store in Piccadilly!

The history of preserving can be traced back to the Middle East. Up until very recently, people would preserve fruit and vegetables as a method of storing food for use through the winter months of scarcity. These days however, preserving isn’t a necessity and it has therefore evolved, becoming a sophisticated way of enhancing food. Because it’s premade its become a kind of ‘fast food’ – we can slap it on a sandwich, or a piece of meat and – hey presto! – a delicious meal in a matter of minutes!

Flavoursome stories

Oded provides a rich description of each of his preserves, complete with recommendations of how best to use them (this can be found on their website as well). In fact, so many of his products have a story it was like being a kid in a candy store for the Food With A Story team the day we visited Oded (not to mention the flavours)!

For example, the Strawberry Vinegar Reduction was born from a mistake – Oded once forgot a pot of strawberry cordial on a hot stove overnight. In the morning, Oded’s heart sank as he was greeted by the scent of burning sugar, only to discover that the cordial had caramelised into a delightful strawberry reduction! This can be used to make an exotic vinaigrette.

Then there’s the superfood preserve (the Baobab and Apple Jam with a beautiful moussey texture), the Mexican inspired Chocolate Chilli Marinade, and the Ginger Chutney recipe found in an 18th Century cookery book - not to mention the tricks Oded learned from Aunty Yeva (Strawberry Vodka Jam)!

Good enough for royalty

Of course, once you’ve tried Oded’s preserves you’ll never look back. In fact, the popularity of Oded’s absolute favourite (the one he says he wants to accompany him to the grave), the Harrief sauce, has not even been overlooked by royalty! This was one of the most popular of Oded’s range sold at Fortnum and Mason, and one day he received a phone call from the lawyer of an Arabic prince. It was a request to fly three cases of Harrief to the prince’s home!

Oded certainly adds a certain finesse to his preserves. Whether it be by roasting his peppers on the open fire, using earthy spices like Nigella, or simply through his genetic talent for preserving (or magic touch?), it works for us!
